What is IgE Antibodies to 15 Common Foods?
Immunoglobulin E mediates immediate-type hypersensitivity reactions. Food-specific IgE binds to mast cells and basophils; upon re-exposure to the allergen, cross-linking of IgE triggers degranulation and release of histamine and other mediators, producing symptoms within minutes to two hours. Sensitisation (detectable IgE) does not always equal clinical allergy — many individuals with positive IgE to a food tolerate it without symptoms.
